Fangst — Nordic Sardine with Pumpkin Purée, Pickled Carrot & Crispy Seeds
Sweet pumpkin, sharp pickled carrot, cool yoghurt and the deep umami of Fangst's Nordic sardine — this is a bowl that punches well above its simplicity. The crispy pumpkin seeds add the crunch that ties it all together. Earthy, bright and Nordic to the core.

- 1 can FANGST Brisling No. 1 — The Nordic Sardine
- Pumpkin purée (roasted and blended, or good quality store-bought)
- 2-3 carrots, peeled and thinly sliced
- 2 tbsp white wine vinegar + 1 tsp sugar (for the quick pickle)
- 2 tbsp plain yoghurt
- A handful of pumpkin seeds, toasted until crisp
- Fresh herbs (dill, chervil or flat-leaf parsley)
- Salt
Method
Quick-pickle the carrot slices by tossing them with vinegar, sugar and a pinch of salt — leave for at least 10 minutes. Spoon a generous layer of pumpkin purée onto a plate and add a few dollops of yoghurt. Top with Fangst Nordic sardines from the can, the pickled carrot slices and crispy pumpkin seeds. Finish with fresh herbs and a pinch of salt.
